秦玉梅,女,硕士生导师,2012年获食品科学博士学位,2013-2016美国Monell Chemical Senses Center从事博士后研究工作。研究方向围绕食品感官科学在食物营养认知及食物功效作用中机制问题,以化学感觉中味觉为主线,探讨不同基本味感觉细胞定向分化调控机制,探索口腔味觉细胞免疫认知新功能,诠释味觉功能紊乱机制,构建多种味感觉细胞系服务食品呈味物质筛选;结合搭建基于迷你肠(Mini-gut)的食物吸收及功效评价平台探索味感觉肠道营养认知功能。迄今,主持和参加国家自然科学基金项目4项,主持和参加浙江省自然科学基金3项,PloS Biology, PloS Genetics, Food Chemistry, Biomaterials, Developmental Biology等杂志发表SCI论文15篇。2017年获得第39届美国化学协会年会Polak 青年研究者奖。
